Make-Ahead Sausage Casserole

Cook and drain off fat from:

1          -           pound              pork sausage

Thaw and drain well:

2          -           packages          frozen chopped spinach (10 ounces each)

2          -           packages          frozen chopped broccoli (10 ounces each)

Combine with sausage, spinach, and broccoli with:

1          -           can                   cream of mushroom soup

-           1/2       cup                  mayonnaise

-           1/2       teaspoon          dill weed

-           1/2       teaspoon          pepper

-           1/2       teaspoon          Beau Monde seasoning

-           -           -                       seasoning salt (to taste)

1          -           teaspoon          lemon zest

3          -           tablespoons     lemon juice

-           1/2       cup                  walnuts (chopped)

A)  Spread  mixture into a 9 x 13 x 2” casserole pan. This can be done a day ahead.

B)  Before baking, cover with cheese and tomatoes.   Bake for 30 minutes.

C)  Remove from oven and sprinkle with onions. Bake for an additional 15 minutes.
